Summer Mash
I started a square foot garden in the spring and have been harvesting a lot of awesome greens for the past weeks. I can recommend growing a few veggies to anyone. It's very rewarding and healthy, since you can grow organic. And if you use the square foot garden method, it's also very easy and cheap. This easy recipe is the result of picking a combination of greens, which turned out to work really well!
It uses a few potatoes, but because I replaced half of the amount with cauliflower, it still is a low carb dish.
Summer mash (serves 2)
0.5 pound (200 gr.) potatoes
0.5 pound (200 gr.) cauliflower
Approx. 3 oz. (100 gr.) Swiss chard
1 handfull of rocket
2 scallions
1 handfull of lettuce
about 2 tbsp butter
about 3 tbsp heavy cream
Salt and pepper to taste

Cut the potatoes in half and boil until they're well done.Cut the cauliflower in small pieces and boil or steam until just tender (don't overcook!). Cut the stems of the chard in 1 inch pieces and fry them lightly in a bit of oil. Cut the leafy bits of the chard and the lettuce into strips and set aside. Cut the scallions and rocket and set aside. Mash the potatoes and cauliflower with the butter and cream untill it has the consistancy you prefer (for this dish, I like it when it still has some bite and is a little chunky). Add the cut greens and mix thoroughly. Add some salt and pepper to taste, but don't cook anymore. It still has a nice crunch this way, because of the raw greens, but has the comfort of a warm cooked meal. Serve with some crispy fried bacon pieces, and maybe some spicy mustard.
