Super fast smoked fish salad

This recipe is great for lunch on the go. Because it has no leaves in it, it won't go limp if you don't eat it right away. And best of all: it's really easy to make!

You can use any kind of smoked fish you want. I chose smoked trout for this recipe, but I'm sure some smoked mackerel will be just as good. Or even smoked chicken. It's just that the smokiness is so good with the freshness of the rest of the ingrediƫnts.

Ingredients (serves 1):

2 oz (60 gr) cucumber, cubed
1/2 avocado, cubed
2 oz (60 gr) pickle (gherkin), cut in bite sized pieces
3 oz (90 gr) smoked trout (or other smoked fish)
1 tbsp mayonnaise
About 1 tbsp lime juice
Sea salt & pepper

Cut the vegetables in bite sized pieces. Be careful not to use a very ripe avocado, because it will go all mushy on you. Perfect for guacamole, not so for salads.

Tear the fish meat apart into chunks and mix with all the other ingrediƫnts. Dilute the mayonnaise a little with a tbsp of lime juice (othterwise it's a little too stiff. And also for flavor of course). Just stir a tiny bit of juice in a tbsp of mayonnaise. Stir well, until smooth.

Finally, mix the mayonnaise with the veg/fish mix and give it a sprinkle of coarse sea salt and some freshly ground pepper.

  1. I like fish with chips a lot. Fried foods are my favorite. Fish with chips is my favorite takeaway item. I also like this one and told mother to make this at home also. more information here
